Calabacitas Con Puerco
(Mexican Squash with pork)

3 pounds lean pork - cut sliced or quartered
2 #303 cans tomatoes
2 #303 cans whole kernel corn -drained, or 5 ears corn -cut off cob
Cooking corn
3 to 4 pounds calabacitas -bite-sized cubes
1 large onion - chopped
1/2 teaspoon cumin
Salt and pepper to taste
2 garlic buds - chopped fine
In large stew pot, heat oil and brown cubed pork. Add onion and garlic. Stir until vegetables are sauteed. Add squash and cook 10 minutes. Add salt, pepper and cumin. Add tomatoes and corn. Add chicken broth if the mixture needs liquid. Cook until squash is done (about 45 minutes). This may be made with chicken pieces or a mixture of pork and chicken.
