CANDIED SWEET POTATOES
(from Hartley County 4H)

3 medium sweet potatoes or yams
3 tbsp. brown sugar
1 tbsp. margarine
1/4 to 1/2 cup nuts

Cook fresh sweet potatoes in enough boiling water to cover, for 25 to 35 minutes or until tender. Drain; cool slightly. Peel potatoes; cut into 1/2 inch thick slices. In a 1 quart casserole, layer half of the potatoes, half of the brown sugar, and half of the margarine. Repeat layers. Bake, uncovered, in a 375 oven for 30 to 35 minutes or until potatoes are glazed, spooning liquid over potatoes once or twice. If desired, sprinkle with nuts and bake for 5 more minutes.
Yield: 4 servings.
