SQUASH CASSEROLE

2 to 2 1/2 lbs. squash
3/4 cup chopped onion
15 rich buttery crackers, crushed
2 eggs, beaten
Salt and pepper
1 cup grated cheese
1/4 cup margarine
1 1/2 cups rich buttery cracker crumbs

Slice and cook squash with chopped onion until tender and drain. Add 15 crackers crushed into crumbs, eggs, salt and pepper, and grated cheese. Pour into 2 quart greased casserole dish. Combine the margarine and 1 1/2 cups cracker crumbs. Cover the casserole with the buttered cracker crumbs. Bake 25 minutes at 350 degrees.
Yield: 8 to 10 servings.
