SARAH LINEBERGER'S PECAN PIE

1 box of brown sugar (one pound)
8 tbsp. milk
4 eggs (beaten)
1 stick margarine (melted)
1 tbsp. vanilla
1 cup chopped pecans
(To make coconut pie, substitute one cup grated coconut)

Chop pecans (crosswise) and place in bottom of prepared pie crust. Mix rest of ingredients in order given, and pour over pecans. Bake at 400 F for ten minutes, lower heat to 325 F and bake until done (approximately 35 more minutes). Pie is done when surface appears golden brown and slightly crusty.
Makes two pies.
Use fresh, high quality Texas pecans. Your pies will be no better than the flavor imparted by the nuts.
