BANANA NUT MUFFINS
(Lee County 4H)

1/2 pound melted margarine
1 cup sugar
2 eggs, lightly beaten
4 large bananas, very ripe
1/2 teaspoon vanilla
2 cups unbleached flour
1 teaspoon baking powder
1 teaspoon baking soda
1/8 teaspoon salt
1/4 cup sour cream
1 cup chopped walnuts or pecans

In large mixer bowl combine margarine, sugar and eggs. Cream at low speed until light and fluffy. Place bananas and vanilla in food processor and puree. Add puree to creamed mixture and beat to incorporate. Add flour, baking powder, baking soda and salt and beat to incorporate. Add sour cream and nuts, and beat until well blended. Fill lined or greased muffin pans 3/4 full and bake in a preheated 350 degree oven for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
Yield: 24 muffins.
