Sweet Spinach and Yam Pie

2 ea eggs
12 oz cooked yams (canned is fine)
3 oz sugar
1 oz brown sugar
1 tsp cinnamon
1/2 tsp ground ginger
1/16 tsp nutmeg
1 1/2 cups milk
5 oz sweetened condensed milk
10 oz blanched chopped spinach, well squeezed
1 ea prepared pie shell

Mix all ingredients except spinach and pie shell. Spinach should be steamed or very quickly dropped into boiling water and then shocked in ice water to retain color. It must be squeezed prior to putting into pie.

Place spinach into pie shell and pour filling over and just barely mix as to not turn the whole pie green.

Bake at 325 degrees for approximately 45 mins.
