MICROWAVE BAKED POTATOES

4 - 8 oz. potatoes

Prick each potato in 2 or 3 places with a fork. Place a double thickness of paper towels on the floor or turntable of the microwave. Arrange the potatoes like the spokes of a wheel on the paper towels.

Microwave on high power for 10 minutes. Turn the potatoes over; microwave for 5 minutes more. Check for doneness with the tip of a sharp knife. If the potatoes are not completely cooked, microwave them a 2 minute intervals, checking for doneness. Serve with Sun-Dried tomato and Basil Topping. (Recipe follows)
