Jalapeno Beef & Cheese Roll-ups

8 flour tortillas
2 pounds ground beef, browned
2 cups shredded Monterey Jack cheese with hot peppers
8 tablespoons mild, thick and chunky salsa
Soften tortillas: fold a sheet of wax paper in half; place tortillas inside. Fold open edges up to seal packet. Microwave on HIGH 15 to 35 seconds. Place 1/8 of the ground beef on each tortilla. Sprinkle 1/4 cup cheese evenly over ground beef. Spoon 1 tablespoon salsa evenly down center of each filled tortilla.
To wrap burrito-style, fold bottom and sides of wax paper over tortilla. Roll tortilla toward corner of wax paper. Place seam-side-down on a microwave safe plate. Microwave 8 tortilla roll-ups on HIGH 8 to 10 minutes, until cheese is melted.
