TEX-MEX CHUNKY SALSA SALAD
3 to 4 medium tomatoes, halved, seeded and cubed (3 cups)
1 large (14 to 16 ounces) Texas SpringSweet or Texas 1015 SuperSweet onion, coarsely chopped
2 cucumbers, pared, halved lengthwise, seeded and cubed
4 tsp. minced garlic
4 jalapeno or other small hot chile peppers, seeded and finely chopped (optional)
1/4 cup fresh lemon juice
1 tbsp. sugar
In medium bowl, mix all ingredients, blending well. Chill until ready to serve. If possible, make ahead so flavors have a chance to blend.
Makes 8 servings (about 2 quarts).
