Spinach and Cheese Triangles
(Wilson County)


10-ounce package frozen chopped spinach, thawed
1/2 cup minced scallions with greens
1/4 cup chopped fresh parsley
1/4 cup minced fresh dill
1/2 cup crumbled feta cheese
4 ounces fat-free cream cheese, softened
1/2 cup farmers cheese
2 tablespoons grated Parmesan cheese
3 large eggs (or equivalent egg substitute)
1/2 teaspoon nutmeg
1/2 teaspoon ground cumin
pepper to taste
20 sheets phyllo dough
1/4 cup butter, softened (optional)

Squeeze spinach dry. In processor bowl, combine spinach with scallions, parsley, dill, cheeses, eggs, nutmeg, cumin, and pepper. Process until smooth. Prepare 36 small phyllo triangles according to directions on package. Fill each triangle with 1 tablespoon of spinach mixture. Brush outside of triangle with butter (optional). Place seam side down on a cookie sheet. Bake in preheated 350 degrees oven for 15 minutes or until golden brown and puffed. Sprinkle finely grated Parmesan cheese over triangles immediately when removed from oven. Serve hot.
